The Best Vegan Chilli

We all need something that is filling and satisfying- well look no further. Mumma’s made-up chilli is a delicious chilli that is cruelty free and made with great ingredients. What’s the best thing about this recipe? Well except from it being guilt free and yummy, you can make as much as you like and it’ll fill pots for you to put into the freezer to enjoy whenever you need a quick meal. Try it and enjoy!


    • 1 large onion

    • Handful of mushrooms

    • 2 peppers (any colour)

    • 1 chilli (whatever strength you like – use pips to add heat)

    • 2 cloves garlic

    • 2/3 packet of Quorn mince or other vegan/vegetarian option (approx.)

    • 1 tin kidney beans

    • 2 tins of tomatoes (use one if you use less mince)

    • Tinned or frozen sweetcorn

    • Tomato puree

    • Salt and pepper

    • Cumin (optional)

    • Smoked paprika (optional)

    • Chilli powder

    • Olive oil/spray lite


Peel and chop onion, chop pepper without seeds, peel and crush garlic, chop chilli (with or without seeds) and fry gently in oil until onion is translucent. Add mushrooms and fry for a further few minutes then add Quorn mince. Keep frying gently for 5 minutes and add a little water or more oil if starting to stick (mushrooms should add water as they soften). Season with salt and pepper and add cumin/paprika if desired

Stir in tinned tomatoes, kidney beans (drained) and sweetcorn (how much you want) and leave to bubble for another 5-10 minutes. Taste then add chilli powder for more kick.

If it’s too runny squeeze in tablespoon of tomato puree and cook for another 5 minutes. Taste again to see if enough chilli!

Serve with nachos, jacket potato or rice.
