Chocolate Brownie for 1

This quick, easy and only containing 60 calories, chocolate brownie for one is sure to be a real treat. It only takes 3 minutes to prepare and 2 minutes to cook. 

Use the ingredients below:

  • 3 tablespoons sugar or erythritol
  • 1 tablespoon white whole wheat flour or almond flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 tablespoon unsweetened applesauce
  • 1 egg whites OR 1/2 tablespoon egg replacer mixed with 2 tablespoon water
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon unsweetened vanilla almond milk if using wheat flour version only

    How to finish it off:
  1. Preheat oven to 350°F (or not, if you want to use the microwave).
  2. Mix sugar or erythritol, flour, cocoa powder, baking powder, and salt in a small bowl. Add in applesauce, egg replacer mixture, vanilla, and almond milk (if using wheat flour) and stir until combined.
  3. Spread the batter into your greased baking dish of choice and bake in the oven at 350°F for 18-25 minutes. Or microwave for about 1 minute 30 seconds. Whichever method strikes your fancy. Let cool for a few minutes and devour.

Refreshing Pineapple Whip

This fruity, refreshing and vegan sweet treat is bound to go down well. It is a simple, 3 ingredient recipe that comes with great results and makes around 4-6 servings. 

Use the ingredients below:

  • 1 fresh pineapple, peeled, cored and chopped
  • 1 cup almond milk, or non-dairy milk of choice
  • 1 tablespoon honey (optional, for authentic sweetness)

How to finish it off:

  1. Firstly, you'll want to freeze the pineapple chunks. So make sure you chop them a day ahead of time, and then freeze the chunks overnight. Alternatively you can also purchase frozen pineapple, if you prefer. 
  2. This recipe works best in a high-speed blender, because you'll need to be able to pulverize the frozen pineapple into an ice-cream-like consistency. A normal blender will most likely not work, but a food processor might.
  3. Combine the frozen pineapple with the almond milk and honey, then blend until a frozen sorbet texture is achieved.
  4. Any leftovers can be frozen in an ice cube tray, and used in smoothies later.

Chocolate Dipped Almond Butter Banana Bites

These can be consumed at any time as a healthy and tasty treat meaning that not all desserts and things that are sweet are bad for you.

Use the ingredients below:

  • 3 large bananas
  • 1/3 cup of nut butter of choice
  • ½ cup of melted chocolate of choice

How to finish it off:

  1. Slice bananas into slices about ¼-1/2 inches thick
  2. Spread a little nut butter onto a slice and sandwich two slices together
  3. Place on wax paper or on a cookie sheet and freeze until solid for at least an hour
  4. Melt chocolate and remove the frozen banana bites from the freezer
  5. Dip each banana bite into the chocolate and place it back on the wax paper and freeze for another hour
  6. Transfer and keep in an airtight container in the freezer for up to 2 weeks.
